Apple Cinnamon Oatmeal

Sunday, May 20, 2012

I have been playing around with our morning oatmeal routine to try and spice things up.  The thought occurred to me that I should be making this in larger batches at the beginning of the week instead of every morning.  I love the smell of cinnamon and apples especially first thing in the morning.  I have played around with a few ingredients to make the oatmeal clean.....hope you enjoy!

Clean Apple Cinnamon Oatmeal
Ingredients
  • 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
  • 1-1/2 cups fat-free milk or Silk
  • 1-1/2 cups water
  • 1 cup uncooked steel-cut oats
  • 1 tablespoons honey
  • 1/4 teaspoon molasses
  • 1/2 teaspoon cinnamon
  • 1 tablespoon ground flax seed
  • 1/4 teaspoon salt
  • Optional toppings: chopped nuts, raisins, unsweetened cranberries or fruits
Directions
Spray the inside of 3-1/2 quart (or larger if you are doubling recipe) slow cooker with cooking spray. Add all ingredients minus any additional toppings to slow cooker. Stir, cover, and cook on low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.
